Selecting the drives for use in a RAID array is a basic part of the process, and the option to do that is there.
What screen are you using to try to create the RAID array?
Did you install Windows with the SATA mode set to RAID?
Did you install the Intel Windows IRST RAID driver and utility program? That is the Intel Rapid Storage Technology driver and utility ver:15.5.0.1051 installation program from your board's download page:

If you did, you can create the RAID 0 array in Windows using the IRST program.
